Both practices are old and nearly universal, and the reason for them is sitting in the spelling of two ordinary words.

Two words, five letters, one swap

Prayer is תְּפִלָּה, tefila: tav, peh, yod, lamed, hey. A wick is פְּתִילָה, ptila: peh, tav, yod, lamed, hey.

The same five letters. Only the first two trade places, and it matters which letter moves. The פ, the peh, is the mouth, and it steps to the front.

Prayer ends where the mouth ends

David sets the limit himself, and he is blunt about it.

לֹא הַמֵּתִים יְהַלְלוּ יָהּ

The dead do not praise God. Tehillim 115:17

The Gemara states the legal version of the same fact: the dead are freed from the mitzvot entirely (Shabbat 30a). Not failing at them. Released from them. Whatever a person owed while breathing, the account closes.

Which leaves the problem every mourner has felt without being able to name it. Prayer runs on a mouth. When the mouth stops, the instrument is gone, and the thing it was doing has nowhere left to continue from.

The wick is the same word with the mouth moved

Rearrange tefila into ptila and the peh has moved from the throat to the flame.

That is what a candle lit for a soul is doing. It is not a memorial in the sense of a plaque, which marks an absence and then sits there. It is prayer carried on by other means, through an instrument that needs no lungs, from a place the voice was never permitted to leave.

A wick lit for a soul goes on ascending after the mouth has closed. The same reading explains the lamp that burns tamid where no voice is praying: a continuous flame is a continuous prayer, maintained without anyone needing to be in the room.

Why light alone does not finish the job

The teachers describe passing a flame from candle to candle, generation to generation. The image is right and it is incomplete, because a flame on its own reaches only half the distance.

A soul does not wake to argument. It wakes to what it recognises.

There is a word for the state it wakes from. נִרְדָּם, asleep, and sitting inside it is נֵרְדְּ, the nard of Shir HaShirim, and inside that is נֵר, a lamp. Shir HaShirim 1:12

Scent reaches where light cannot carry and argument cannot go, which is why the ketoret stopped a plague at the line where Aharon stood holding it, in the one dimension a Shabbat candle still leaves dark. The Gemara assigns smell to the soul alone and gives the body nothing from it (Berachot 43b), so it is the one channel that reaches something no longer in a body.

A flame for a soul, and a drop of scent beside it. The light is the prayer continuing. The scent is the part that is recognised.

The weekly rhythm this already runs on

An extra soul is given at the entrance of Shabbat and taken back at its close, and the spice box is opened to meet that departure (Beitzah 16a; Shulchan Aruch, Orach Chaim 297:1). The legislated response to a soul leaving is a smell, once a week, at every table.

The bone the tradition says a body is rebuilt from takes nourishment at one meal only, the Melaveh Malkah that escorts Shabbat out (Shibbolei HaLeket 130). The deathless part of a person eats at exactly the hour the scent is raised.

Where the rising goes

At the sea, Egypt loses one part of a chariot and the verse is specific about which.

וַיָּסַר אֵת אֹפַן מַרְכְּבֹתָיו וַיְנַהֲגֵהוּ בִּכְבֵדֻת

He removed the wheel of their chariots and drove them heavily.
